Spray drying is one of the dehydration methods chosen for the pharmaceutical and food industries, employs an atomized and a stream of hot gas to produce granules and dry powders from a slurry or liquid. The atomizer will disperse liquid feed into fine droplets from which the liquid evaporates and leaving behind solids. Products dried with the use of this process include cake mix, powered milk, detergent, instant coffee, ceramic powder and yeast extract.

Spray dryers are versatile and thus able to meet the requirements of a large or small scale production. Before choosing the design of a spray dryer tower and the type of atomizer, there are several properties to evaluate, These may include the actual particle size, the liquid to be dried, powder quality and distribution.

It is also effective for its quality control. Most of the method used can produce powder of the controllable particle size and overall quality. Other characteristics can also be manipulated during the entire procedure that includes residual solvent levels, bulk density and a degree of crystallinity. It can control the parameters that makes the method desirable for industries where absorption of drugs will depend on the particle size.

The selection and operation of the atomizer is of extreme importance in achieving an optimum production and operation of top quality powders. There are actually many reasons why the tool is essential for any given application. The dry particle sizes can also be controlled by certain atomization and the designs of the hot gas inlet. Once the process is done properly the spray dryer techniques and designs can also increase the yields of products that require classification.

The shape of the spray dried particles is also spherical, which can provide for fluid like flow properties. This makes a lot of downstream operations such as pressing, packaging, handling and filtering easier at lesser cost. It also produces homogenous products for multiple solutions. Most of the particles will be of the same composition.

The mass and heat are transferred during the procedure and may occur in the air and vapor films surrounding the droplets. The vapor protects and keep the particles at its saturation temperature. Every surface area can also be produced by the atomization and enables a short gas resident depending on its application which allow the use of the process without any thermal degradation.

To offer a real example why one must consider the method is the milk. In different parts of the world, refrigeration is not the main stream in regions such as North America. The ability to keep large quantities of products cold like milk is also limited. In this region, powdered milk is used as needed, thus increasing its shelf life.

The fat soluble vitamins in the powdered nutrient premix can be done by using this drying method to the nutrients and added to the premix. This dryer provides a quick procedure for drying all products compared to available methods. Thus, an important advantage of the process is that the mixture can be diverted to a dried product.

Recent study shows that using these techniques may not an alternative for cystallization. This is because, during the process, its temperature may significantly provide some effects depending on its residence times.
